Fructose is the most common hexketoose, which is often present in large amounts as a free monosaccharide in fruits and honey. A large number of epidemiological data and experimental studies have shown that excessive fructose intake may be an important factor in the increased incidence of metabolic diseases. Fructose can produce a specific product under the action of enzymes, which reacts with the chromogenic agent to produce a fluorescent substance (Ex/Em: 530 nm/590 nm).
